Bonjour voici un retour d expérience
n ayant pas trouvé de recette sur le net, j ai essayé 3 recettes de brioche sans gluten
En mixant des recettes de brioche sans gluten et des recettes de brioche au levain et de ce que j avais dans mon placard
N hésitez pas si vous pensez que je peux améliorer la recette je n y connais rien quand aux propriétés des farines sans gluten

Recette 1 :
100g levain de riz
50g sucre
50g lait
125g beurre
2 oeufs
60g farine riz
60g farine de sorgho
60g farine de millet
75g fecule de p de terre
10g psyllium

Petrir
Levée 4h30 à 24°
1 nuit au frigo
Levée 2h à 24°
Cuire 180 30 min
Résultat :
On voit une levée (mais bon ca n a pas doublé non plus)
gout de brioche mais gout de beurre trop proncé
Pate trés friable
=> à refaire avec moins de beurre

Petite précision le lait c est en fait le petit lait obtenu aprés fermentation au kefir de lait
Et le beurre est 1/2 sel
