Pour ceux et celles qui veulent la recette du Panettone par l'un des maîtres du panettone italien. C'est en italien bien évidemment.

Levain

100g de jus de fruit ou pulpe de fruit
200g de farine (Farine blanche riche en protéines de préférence 12% sur poids total ou 14% sur extrait sec)
100g d'eau pétillante (il est précisé que c'est essentiel pour convertir l'ensemble en une pâte acide)

Mélanger parfaitement bien les ingrédients et laisser pousser à 26°C à 28°C pendant 48h à couvert. Il faut que la pâte ait triplé de volume. Si ce n'est pas le cas après 48h il faut laisser continuer à pousser.
Ensuite, vous pesez votre levain et vous y ajouter le même poids en farine et 45% à 50% d'eau.
Pétrir la pâte pour obtenir un mélange homogène. Emballé dans un linge de coton et ficeler comme un rôti mais pas de trop.
Il paraît que cet emmaillotage permet d'éviter un développement trop rapide de l'acidité et une trop rapide consommation du sucre.
Il faut le laisser pousser à 18°C environ 12h à 24h. Ensuite, il peut rester emmailloter 4 à 5 jours au froid.

Lorsqu'on décide d'utiliser le levain on le sort de son emballage et on utilise uniquement le coeur du levain. On rafraîchit de la même manière que précedement cette fois à une température de 27°C à 28°C jusqu'à que cela triple de volume avant de rafraîchir. La durée est d'environ 4h.

Le bain dans une eau légèrement sucrée est important si le levain est très dur.

D'après le document, il est mentionné que lorsque le levain devient bien blanc avec une odeur Aigre-douce le levain est prêt.
Il est interessant d'apprendre qu'à l'odeur et à la couleur du levain, il est possible de détecter l'état de celui-ci.

Tous les rafraîchis doivent se faire au pétrin ou au mélangeur ou alors bien travailler la pâte à la main et l'ouvrir au rouleau et la replier plusieurs fois sur elle même . La pâte doit prendre de la force.

Il est précisé de s'assurer de désinfecter tous les instruments qui devront être utilisés pour le levain et de prendre bien soin d'éviter que le levain soit en présence ou en contact d'élements qui pourraient le mettre en danger.

Il est conseillé de l'utiliser dans une proportion de 25% à minimum de 15% lorsque la pâte est très riche en beurre et en sucre. Pourtant dans le livre d'ou sont issues ces informations la plupart du temps le levain représente 25%
